More informations

This oil embodies a genuine commitment to solidarity and the local area. Sourced exclusively from orchards in the Aix-en-Provence region, it reflects the excellence of local, certified organic production.

The Moulin de Château Virant, which is also certified organic, plays a key role: it supports the region’s olive growers by carefully processing their olives and promoting their work through ethical and sustainable marketing. From tree to bottle, every stage of the process is certified organic, guaranteeing full traceability and a deep respect for the environment.

Pairing

It has a pale green colour with yellow highlights. On the nose and on the palate, the dominant aromas are vegetal, with notes of hay and dried almonds.

It is a light, well-balanced oil, round on the palate, with no bitterness and very little pungency. Whether used raw or cooked, this oil pairs well with all kinds of salads and dishes. It is a light oil for light dishes.

Olive oil is a living product that does not go off, but requires careful handling. Unlike wine, it does not improve with age: it is a fresh fruit juice best enjoyed within a year.

To ensure it retains all its nutritional properties and its precious ‘green fruit’ notes, be sure to protect it from its three enemies: light, air and heat. Simply store it in a cool cupboard and remember to close the cap tightly after each use.

Having been committed to sustainable and responsible viticulture for many years — recognised by the High Environmental Value (HVE) label — Virant is now taking a new step forward with an ambitious agro-ecological transition, centred on restoring and maintaining soil life.

Plant cover, limiting inputs, and encouraging natural beneficial organisms: every practice is designed to nurture the estate’s biodiversity and strengthen the natural balance of our 46 hectares of olive groves.

Produced in limited quantities, this oil is deliberately not entered into competitions.
