More informations
At Château Virant, we are fortunate to cultivate an exceptional Picholine orchard, rooted in our Provencal terroir. This emblematic variety from the South of France, with its lively, robust and elegant character, represents a genuine living heritage that we are committed to fully exploiting.
It is in this spirit of transmission and excellence that we have chosen to produce a single-varietal extra virgin olive oil, dedicated to Picholine. Its intense aromatic profile, with notes of fine herbs, green fruit and fresh pepper with characteristic plum aromas, makes it an oil of character, rich and singular, that will appeal to the most demanding connoisseurs.
This oil is much more than a product: it's the pure expression of local know-how, a preserved terroir, and a unique variety that deserves to be highlighted.
Picholine stands out not only for the richness of its oil, but also for its rare versatility. In fact, it is one of the few French varieties traditionally used for both oil and table use. Harvested earlier, it produces a crunchy, green and flavorful olive, much appreciated as an aperitif or in Mediterranean dishes.
This dual aptitude makes it a highly valuable variety, which we are committed to cultivating in all its forms.
Pairing
A true flavor enhancer, this high-intensity olive oil is perfect for lovers of bold, sensational oils! It pairs beautifully with dishes that carry a strong culinary identity:
Fresh Produce: It magnificently elevates the freshness of spring vegetables and vibrant Mediterranean dishes.
Grilled Mainstays: It pairs ideally with grilled red or white meats, as well as seared and barbecued fish.
Tasting advice
Olive oil is a living product that does not go off, but requires careful handling. Unlike wine, it does not improve with age: it is a fresh fruit juice best enjoyed within a year.
To ensure it retains all its nutritional properties and its precious ‘green fruit’ notes, be sure to protect it from its three enemies: light, air and heat. Simply store it in a cool cupboard and remember to close the cap tightly after each use.
environmental initiatives
Having been committed to sustainable and responsible viticulture for many years — recognised by the High Environmental Value (HVE) label — Virant is now taking a new step forward with an ambitious agro-ecological transition, centred on restoring and maintaining soil life.
Plant cover, limiting inputs, and encouraging natural beneficial organisms: every practice is designed to nurture the estate’s biodiversity and strengthen the natural balance of our 46 hectares of olive groves.
Awards
For its very first batch, the 2024 vintage, our Picholine extra virgin olive oil was entered for the first time at the Concours Général Agricole de Paris. We won a silver medal there. Then, for the 2025 vintage, we are proud to announce that it won a gold medal there, recognising the quality of our work and the exceptional potential of this single-varietal olive.
This accolade rewards a rigorous approach that respects the fruit and the terroir, and encourages us to continue on this path of excellence.
