More informations
Our Vallon des Oliviers olive oil is the result of a wonderful local venture, produced from olives supplied by our carefully selected partner growers.
Bearing the Provence PDO designation, this extra virgin olive oil is obtained through a first cold pressing to preserve the full aromatic richness of the Provençal terroir.
The varieties chosen for this blend offer a particularly balanced and harmonious profile, characterised by crisp aromas of freshly cut grass, tomato and fresh almonds.
On the palate, it has a lovely, full-bodied structure, subtly enhanced by a slight piquancy that perfectly complements its Mediterranean character.
Pairing
With its remarkable balance, this versatile olive oil adapts to all your culinary desires without ever letting you down. Highly versatile, it can be enjoyed both raw and cooked for all kinds of uses. Favourite dishes: Ideal for drizzling over a dish of fresh pasta, thickening a vegetable tian or enhancing a white fish fresh from the oven.
Tasting advice
Olive oil is a living product that does not go off, but requires careful handling. Unlike wine, it does not improve with age: it is a fresh fruit juice best enjoyed within a year. To ensure it retains all its nutritional properties and its precious ‘green fruit’ notes, be sure to protect it from its three enemies: light, air and heat. Simply store it in a cool cupboard and remember to close the cap tightly after each use.
environnemental initiatives
Having been committed to sustainable and responsible viticulture for many years — recognised by the High Environmental Value (HVE) label — Virant is now taking a new step forward with an ambitious agro-ecological transition, centred on restoring and maintaining soil life. Plant cover, limiting inputs, and encouraging natural beneficial organisms: every practice is designed to nurture the estate’s biodiversity and strengthen the natural balance of our 46 hectares of olive groves.
