More informations
At Château Virant, a land of fruity greens par excellence, we've chosen to break new ground by revisiting an ancestral method once mastered by our region's greatest master millers: the production of a virgin olive oil from matured olives, also known as goût à l'ancienne.
This traditional know-how is based on natural, controlled fermentation of the olives, revealing deep, bewitching aromas of black tapenade, cocoa and undergrowth. This unique profile, both sweet and complex, is increasingly appealing to our loyal customers, as well as to many chefs in search of forgotten flavors, seeking a sensory link with the culinary memory of the Mediterranean.
This project was born of our desire to highlight the richness of our orchard and to take our mastery of olives a step further, exploring all the facets of this noble fruit. It embodies both tradition and innovation, rooted in local history while responding to today's taste aspirations.
Pairing
As rich and velvety as it is intense, this characterful olive oil is the perfect secret to enhancing robust dishes as well as surprising sweet-and-savoury combinations:
As an aperitif & starter: An absolute delight when used raw to flavour focaccia, fresh bread or a wild mushroom risotto.
Flavourful dishes & roasted vegetables: It excels with vegetable dishes featuring aubergine or cabbage, polenta, as well as with strong-flavoured meats such as game or bull.
On the sweet side: Let yourself be surprised by its extraordinary pairing with dark chocolate desserts.
Tasting advice
Olive oil is a living product that does not go off, but requires careful handling. Unlike wine, it does not improve with age: it is a fresh fruit juice best enjoyed within a year.
To ensure it retains all its nutritional properties and its precious ‘green fruit’ notes, be sure to protect it from its three enemies: light, air and heat. Simply store it in a cool cupboard and remember to close the cap tightly after each use.
environmental initiatives
Having been committed to sustainable and responsible viticulture for many years — recognised by the High Environmental Value (HVE) label — Virant is now taking a new step forward with an ambitious agro-ecological transition, centred on restoring and maintaining soil life.
Plant cover, limiting inputs, and encouraging natural beneficial organisms: every practice is designed to nurture the estate’s biodiversity and strengthen the natural balance of our 46 hectares of olive groves.
Awards
This vintage reaffirms its excellence and distinctiveness, reflecting the superb 2025 vintage, when its unique profile was honoured with a prestigious Gold Medal at the Grand Concours Général Agricole de Paris.
